Triple whammy

August, September, October, November, December.  The unhappiest time of year around these parts.

It's been a year and three months and 6 days.  It feels like last week as I find myself reliving why I didn't make those sugar cookies during her last Christmas.  Why I didn't harass her in June to go get that "wheezing" checked out. Why in May I didn't learn to quilt with her before she wasn't able. 

I thought last year would be the worst. It's not. 

It has finally sunk in. She's not coming back.  And I say to myself, well, you know there's really never a "good time to die" and we want to hold on to our loved ones for as long as we can...but it still feels so unfair. 

August. Mom. September. George. October. My birthday. November. Thanksgiving. December. Christmas Eve.

I need this year to be over already. I've never felt this tired before.

A little time to myself

Lately I've been doing a lot of things alone. Not because I've wanted to but simply because it worked out that way. I've tried to do things with friends. They're busy. We're always busy. I guess it's a good thing I like hanging out with myself. Today it was pure barre and Starbucks. 
That class was brutal.  I'm fairly certain no one's legs should be able to hold those positions for as long as we do. Well, not me but you get the point.

Summer is just beginning and I'm already bored.

Protein Powder Waffles

Protein waffles - easy recipe and delicious!

1 scoop of RX Meal vanilla protein powder (smells like ICE CREAM!)
1 tsp baking powder
1 egg
1 splash of water
Optional - spices of your choice - cinnamon, nutmeg, etc. or nuts, seeds, fruit, etc. 

I use my MISTO to spray EVOO on the waffle maker.  If you don't have a MISTO you can buy one here.

Step 1: Whip 1 egg with a splash of water (about a tbsp) 
Step 2: Heat the waffle iron and spray with olive oil
Step 3: Slowly add protein powder while whisking until combined. 
Step 4: Stir in other spices, additions at this time.  Some suggestions include pecans, cinnamon, vanilla, chia seeds, or dried fruits like cranberries or raisins.
Step 5: Pour 1/4 cup of batter on waffle iron and cook

Close and flip.  You will know when the waffle is finished when it stops steaming from the waffle iron.

I enjoyed mine with a tablespoon of whip cream and apricot and strawberry preserves.
